This low-carb mix makes it ridiculously easy to prepare ‘oatmeal’ at home. It’s all about making time to save time. Do you have five minutes to spare? that’s how much time you need to prepare this keto-friendly porridge mix, or is it oatmeal? sometimes, my British side wants me to call it porridge. It doesn’t matter. It will still taste amazing!

I have made a bowl of ‘oatmeal’ from this mix countless times and saved a lot of time in my morning routine. I make this oatmeal around 11 am when I finish my 14:10 fast; I’m not hungry again until 4 pm. It tastes just like oatmeal; it’s thick and grainy with a hint of cinnamon and sweetener, a good base for many topping ideas.

One thing for sure is that this recipe for Instant Keto Oatmeal Mix does not contain quick-cooking oats, rolled oats, steel-cut oats or any flours or grains – nope, nada! 

It contains the super seed trio; Chia, Hemp Hearts and Golden Flax seeds, with some coconut flour, cinnamon and sweetener – all shaken up into a jar. This mix is an easy way to increase your fibre intake, reducing carb content if you are counting net carbs like me.

Unsweetened Almond Milk and whipping cream make this dry instant ‘oatmeal’ mix come to life. You could add the mix to smoothies and cake batters to boost fibre.

How to make Instant Keto Oatmeal Mix (without oats)

Make this instant oatmeal mix on the weekend and keep it in the fridge. Use it to prepare your ‘oatmeal’ during the week whenever you want to eat something quick, warm and cozy for breakfast.

Ingredients

Chia Seeds – They have been the rage on internet sites forever, packed with nutrients, high in fibre, source of protein and fatty acids. Chia seeds help to reduce blood sugars and allow all the ingredients in this recipe to gel, giving it an oatmeal texture.

Hemp Heart Seeds – Similar to Chia Seeds, these keep you full longer and are a great source of plant-based protein; they also have a nutty flavour.

Golden Flaxseed Meal – Improves digestive health, relieves constipation and is known to lower blood cholesterol and LDL levels.

Coconut Flour – A little bit goes a long way; it bulks up the mixture in the cooking process. Coconut flour is heart-healthy and also packed with fibre.

Sweetener – Adds sweetness to the oatmeal mix when prepared.

Cinnamon –  Adds aroma to the oatmeal mix while it cooks.

Chopped nuts – toss in at the end of cooking and add some crunch and texture.

A note on salt – I don’t add salt to this recipe as some toppings like nuts and low-carb syrups already contain salt. It’s best to have the option to add salt than ruin a bowl of oatmeal.

Making Instant ‘Oatmeal’ Mix (without oats)

Add all the ingredients into a food processor and pulse a few times to grind them into a sand-like texture.

Transfer the mix into a mason jar, glass jar or plastic container and keep in the fridge for up to 1 month.

Making the best ‘Oatmeal’ with Instant Keto Oatmeal Mix

There are two ways to make a single serving of ‘oatmeal’ from the Instant ‘Oatmeal’ Mix, but a little secret requires an essential step before making it.

What’s the Secret?

Some ingredients, like the coconut flour in the oatmeal mix, may settle to the bottom of the jar over time. The secret is to SHAKE the dry mix before making the oatmeal. That way, the ingredients are mixed evenly. You must do this crucial step to avoid ending up with a very thick or thin bowl of oatmeal. 

Stovetop Method

Bring a saucepan of unsweetened almond milk and whipping cream to a slight boil; it will take about 5 minutes.

Add the measured portion of the Instant Keto Oatmeal Mix to the milk and cream. Stir all the ingredients together to combine. The mixture will thicken as the milk begins to heat again. Bring the mixture back to a boil; it will take about 1 minute.

Reduce the heat and simmer for about 2 minutes, occasionally stirring to break up any lumps that form. It will thicken quite quickly. Once it has thickened to your liking, remove the pan from the heat and stir in some chopped nuts. Let the oatmeal sit in the pan for about 2 minutes.

Pour the oatmeal into a bowl and add your favourite toppings. The oatmeal may thicken even more while it sits in the bowl.

Microwave Method

Making your oatmeal in the microwave is very quick. Remember that you need to use less unsweetened almond milk than you would for the stovetop method. I tested it several times using the same amount of almond milk. It made the oatmeal too watery.

Measure a dry measured portion of the Instant ‘Oatmeal’ Mix into a microwaveable bowl. Add unsweetened milk and cream, then stir to combine. 

Microwave the mixture on high for 1 minute, then stir it again. Heat again for 2 more minutes and stir it one more time. The oatmeal should be thicker but may still be watery.

Remove the bowl from the microwave, stir in chopped nuts and let it sit on the counter for 3 minutes.

Add your favourite toppings and enjoy!

How to Store Instant Keto Oatmeal Mix

Store the prepared batch in the fridge to keep the ingredients fresh. It will keep for about two weeks.

Remember the secret: shake the jar before measuring out a serving. 

Double up on the recipe and make Instant low-carb oatmeal packets. Store individual portions in plastic bags, so there is no need to measure out a serving every time; mix the contents with the milk and cream when you’re ready to cook up a cozy bowl of oatmeal.

Prepared oatmeal stored in an airtight container will keep in the fridge for one week. Add some nut milk to thin it out if needed.

I love frozen blueberries mixed into my hot bowl of oatmeal. The juice from the blueberries seeps into it and flavours it sweetly. I always have on hand homemade Keto Granola, it’s very easy to make and goes well with the blueberry juice.

Keto Granola Recipe

  • 1/2 cup Walnuts (coarsely chopped)
  • 1/2 cup Pecans (coarsely chopped)
  • 1/4 cup Pumpkin Seeds ((coarsely chopped)
  • 1/4 cup Almond Flour
  • 1/4 cup Swerve Brown Sweetener
  • 2 Tablespoons Butter (melted)

Mix all the ingredients in a mixing bowl. Spread the mixture onto a parchment-lined baking sheet. Pack it together but form it into a thin layer. Bake at 350F for 8 mins. Let the granola cool on the countertop before breaking it up into pieces. It will harden as it cools.

Instant Keto Oatmeal with Keto Streusel Topping

I never get bored with this Keto Streusel topping. It makes the ‘oatmeal’ taste like cinnamon rolls. I don’t add anything else to it this topping; it has a cozy feel about it.

Keto Streusel Topping Recipe

  • 1 teaspoon Cinnamon
  • 1/2 cup Almond Flour
  • 3 tablespoons Swerve brown Sweetener
  • 1 tablespoon unsalted Butter (Melted)
  • 1/8 teaspoon Salt

Mix all the ingredients in a mixing bowl. Spread the mixture onto a parchment-lined baking sheet. Flatten it out into a thin layer then bake it at 350F for 5-7mins or until the edges turn brown. Cool on the countertop before breaking it into pieces. It will harden as it cools.

Instant ‘Oatmeal’ with Low-Carb Raspberry Jam and Almonds

Of all the jams in the world, raspberry jam is my favourite. With chopped almonds or almond butter, both toppings make the oatmeal heart-healthy. I buy the Smuckers Brand of Raspberry jam. It has no added sugar, making it low in carbs. Roasted almonds pair well with the jam.

To make Instant Keto Oatmeal Mix (without oats)

  • Add all the ingredients into a food processor and pulse a few times to grind all of it into a sand-like texture.
  • Transfer the mix into a mason jar, glas jar or plastic container and keep it in the fridge for up to 1 month.

Stove Top – To make a sIngle serving of Instant Keto Oatmeal

  • Bring a saucepan of Unsweetened Almond Milk and Whipping Cream to a slight boil.(5mins)
  • Add the measured portion of the Instant Keto Oatmeal Mix to the milk and cream. Stir all the ingredients together to combine. The mixture will thicken as the milk begins to heat again. Bring the mixture back to a boil, it will take about 1 minute.
  • Bring it back to a boil. (takes 1 min).
  • Reduce the heat and simmer for about 2 minutes, stirring occasionally to break up any lumps that form. It will thicken quite quickly. Once it has thickened to your liking, remove the pan from the heat and stir in some chopped nuts. Let the oatmeal sit in the pan for about 2 minutes.
  • Pour the oatmeal into a bowl and add your favourite toppings. The oatmeal may thicken even more while it sits in the bowl.

Microwave – To make a sIngle serving of Instant Keto Oatmeal

  • Measure a single dry measured portion of the Instant Oatmeal Mix into a microwaveable bowl. Add unsweetened milk (remember to add 2/3 cup) and whipping cream, then stir to combine. 
  • Microwave the mixture on high for 1 minute, then stir it again. Heat again for 2 more minutes and stir it one more time. The oatmeal should be thicker but may still be watery.
  • Remove the bowl from the microwave, stir in chopped nuts and let it sit on the counter for 3 minutes.
  • Add your favourite toppings and enjoy!
