Instructions
To make Instant Keto Oatmeal Mix (without oats)
Add all the ingredients into a food processor and pulse a few times to grind all of it into a sand-like texture.
Transfer the mix into a mason jar, glas jar or plastic container and keep it in the fridge for up to 1 month.
Stove Top - To make a sIngle serving of Instant Keto Oatmeal
Bring a saucepan of Unsweetened Almond Milk and Whipping Cream to a slight boil.(5mins)
Add the measured portion of the Instant Keto Oatmeal Mix to the milk and cream. Stir all the ingredients together to combine. The mixture will thicken as the milk begins to heat again. Bring the mixture back to a boil, it will take about 1 minute.
Bring it back to a boil. (takes 1 min).
Reduce the heat and simmer for about 2 minutes, stirring occasionally to break up any lumps that form. It will thicken quite quickly. Once it has thickened to your liking, remove the pan from the heat and stir in some chopped nuts. Let the oatmeal sit in the pan for about 2 minutes.
Pour the oatmeal into a bowl and add your favourite toppings. The oatmeal may thicken even more while it sits in the bowl.
Microwave - To make a sIngle serving of Instant Keto Oatmeal
Measure a single dry measured portion of the Instant Oatmeal Mix into a microwaveable bowl. Add unsweetened milk (remember to add 2/3 cup) and whipping cream, then stir to combine.
Microwave the mixture on high for 1 minute, then stir it again. Heat again for 2 more minutes and stir it one more time. The oatmeal should be thicker but may still be watery.
Remove the bowl from the microwave, stir in chopped nuts and let it sit on the counter for 3 minutes.
Add your favourite toppings and enjoy!
