What’s to Love about Crunchy Nut Low Carb Keto Granola?

100% Grain-free crunchy snack

Enjoy a delicious snack that is 100% grain-free with a satisfying crunch and nutty flavour. Every piece is coated in almond flour for a crispy texture. You can even break up this granola into large or small chunks, according to your preference.

Buttery caramel

The secret to the irresistible flavour of this low-carb granola lies in the perfect blend of walnut and pecan halves, which gives it a heavenly buttery caramel taste. It’s so addictive!

Morning cereal

This delectable granola cereal pairs beautifully with cold, unsweetened almond milk, making it the perfect way to kickstart your morning.

Excellent topper

I love storing the pieces whole; that way, I can chop them into smaller pieces and use them for topping over ice cream and muffins or adding to my low-carb apple crisp. That’s the beauty of making your own homemade granola; you have control over the ingredients and can customize it to your liking.

Carbs and Servings in this Recipe

This granola recipe yields about 2 cups; a 1/4 cup serving contains 4.4g of carbs. However, since the nuts and seeds used in the recipe have a significant amount of fibre, there is also 2.3g of fibre in a 1/4 cup of prepared granola.

For those of you counting net carbs, you can safely consume this granola on a low-carb and keto diet, as a 1/4 cup serving provides only 2.1g of net carbs.

SPOTLIGHT on Granola

Did you know that “granola” originally started as “granula” by its creator, James Caleb Jackson? As a health reformer and doctor, he made it for his clients at his sanitarium (aka health spa) in 1863. Then, John H Kellogg (the cereal guy) made his own version of granula and called it “granola” to avoid getting sued by Jackson. It’s interesting how things evolve, isn’t it?

Over time, granola has become widely associated with oats, nuts, and fruit as its main ingredients. However, this doesn’t mean that we have to limit ourselves to creating low-carb or keto versions that should resemble traditional granola in taste and appearance.

Instead, this grain and sugar-free Crunchy Nut Low Carb Keto Granola recipe can be customized according to your dietary needs and personal preferences. Read on for a list of the ingredients, how to make it and the best tips and variations.

Ingredients to make low carb keto granola are in measuring cups on a white countertop.

Ingredients to make Crunchy Nut Low Carb Keto Granola

Walnuts halved – chop them coarsely using a sharp knife.

Pecans, halved– coarsely chopped.

Pumpkin seeds – I love the tiny green specks of pumpkin seeds that shine through the granola. They add a lovely visual element and are a great source of nutrition, making the granola a healthy and delicious snack.

Unsweetened Coconut Chips – I buy them from my local South-Indian store, but any grocery store or Bulk barn should sell them.

Sweetener of choice – I use a brand called Volupta, which contains a combination of erythritol and Monk Fruit.

Unsalted Butter – melted is best for this recipe and helps control the sodium in the recipe.

Almond Flour – I use the Kirkland brand from Costco.

Salt – adds a little tang, which brings out the sweetness.

How to make Crunchy Nut Low Carb Keto Granola

Step 1: Combine the dry ingredients

Preheat the oven to 350F and line a baking tray with parchment paper. Mix all the nuts and seeds into a mixing bowl, then blend in the sweetener, salt and almond flour.

Step 2: Add melted butter

Pour the melted butter over the mixture and stir until everything is thoroughly combined.

Once the mixture is ready, spread it evenly onto the baking tray and press it down firmly with a spatula to form a thin, tightly packed layer.

Step 3: Roast the nut mixture

Place the baking tray in the centre of the oven and roast the nut granola for 8-12 minutes, or until the edges of the granola turn a light golden brown colour.

EXPERT TIP: To ensure the granola bakes evenly, stir the granola in and around the centre halfway during roasting.

Step 4: Let the granola cool, then break it apart

Once the granola is roasted until golden brown, take the baking tray out of the oven and let it cool completely. This will make it crunchy, so avoid breaking it apart while it is warm.

Step 5: Store the granola in an airtight container

Once the granola has cooled, use your hands to break it into pieces and however small or large chunks you like. Then, store it in an airtight container or fancy jar, as shown below. This way, you can enjoy your delicious homemade low-carb and keto granola whenever you like, knowing it’s fresh and healthy.

Best Tips and Variations

  • Include almonds or cashews, or switch them out for the walnuts and pecans.
  • The recipe includes pumpkin seeds, but you can swap that out for sunflower seeds or add chia seeds for a little extra crunch.
  • Roast the nutty mixture until the edges turn brown, and ensure that the granola is stirred halfway through to prevent the centre from underbaking.
  • A granular sweetener like erythritol works best for this recipe since it adds an extra crunchy layer while it cools after roasting.
  • Allow the granola to cool completely before breaking it apart to let the ingredients harden and crisp up.
  • For extra sweetness to your granola, add sugar-free dried cranberries or sugar-free candied orange peels.
  • This recipe uses whole walnut and pecan halves, but if you prefer smaller pieces, pulse the nuts in a food processor before roasting them.
  • Use this granola to make flaky dark chocolate clusters, or add it as a topping to a prepared bowl of instant keto oatmeal mix.

Frequently Asked Questions

Can I add oats to this recipe?

You can add a small amount of oats to this recipe if it fits into your macros or if you have a high-carb budget. Oats are high in carbs and can increase carb content in recipes, which is not recommended for low-carb and keto diets.

How long can you store crunchy nut low-carb and keto granola?

Once you have prepared this granola, store it in an airtight container to keep it fresh. If you leave it out at room temperature, it will stay fresh for up to 2 weeks. However, if you want it to last longer, store it in the fridge for up to 1 month or freeze it for up to 3 months. When you take it out of the freezer, let it sit on the counter for a few minutes to bring it back to room temperature before eating.

Is store-bought granola low-carb and keto-friendly?

Store-bought granola is typically unsuitable for the keto diet as it often contains many carbohydrates. However, you can find some low-carb granola options that are keto-friendly. It’s always a good idea to carefully check the nutrition label before consuming any granola to ensure it aligns with your dietary needs and goals.
