Too good to resist!

My hubby and I are huge fans of hanging out at pubs and trying delicious pub food. Even more, we always try to come up with ways on how to recreate some of our favourites at home. For that reason, antojitos have become no exception for us.

So recently, we tried some antojitos from our local pub, The Copper Kettle, and they looked and tasted fantastic!

Served with a sour cream dip on a large platter, the antojitos were too good to resist, even though they were just for the two of us.

However, since they weren’t particularly low-carb, I couldn’t wait to create a healthier version of them at home.

Perfect low carb finger food

What’s even better- is that these tasty morsels would be great to serve during a fun Super Bowl night or a festive Mexican-themed evening, such as Cinco de Mayo.

The good thing is they’re also easy to pack and take along to summer picnics since they’re mess-free finger foods that can be enjoyed hot or cold.

Additionally, a serving of low-carb antojitos won’t increase your blood sugar levels and will keep you within your carb allowance. If you have keto tortillas or wraps available, go ahead and make a batch now!

Three Reasons why you Should Make Low Carb Antojitos

1) Low carb, keto-friendly and low-fat

This recipe uses low-carb ingredients such as cream and cheddar cheese but also uses cottage cream to keep saturated fats low. Hence, it’s perfect for anyone on a low-carb diet who needs to watch their carb intake, but it’s also a healthier version of antojitos for anyone aiming to reduce fat in their meals.

2) Effortless snack

Spread the spicy cream cheese mixture onto a tortilla or wrap, roll it up tightly, and cut it into thin strips. Bake until golden brown for a delicious and effortless snack.

3) Feed a crowd

If you’re looking for a delicious and healthy way to satisfy your guests at your next party, definitely try these amazing low-carb antojitos! They’re a perfect choice for any occasion and will impress your guests with their incredible bold taste and flavour.

Carbs and Serving Notes

under 5g net carbs

This recipe makes a platter of about 48 antojitos using six low carb tortillas. The ones I use are 8 inches in diameter, and I typically slice them into eight pieces after they’re rolled up with the filling.

If you’re serving antojitos as an appetizer, the serving size of this recipe would be four pieces, which have about 10.8g of carbs and 8.7g of fibre. You can double or triple the recipe to feed a larger crowd.

grab ‘n’ go keto snack

One convenient thing about this recipe is that the filling can be stored in the refrigerator. Then whenever you are craving a bite to eat, just grab a tortilla, fill it with the mixture then air fry it on the fly!

This recipe is perfect for those who want a quick and easy snack option that can be prepared beforehand.

Ingredient Notes

Low Carb or Keto Tortillas:

I use Oroweat Keto Tortillas, which are available in all Walmarts and some grocery stores in Canada. If you live in the US, Aldi stores will carry low-carb tortillas by L’Oven Fresh and Fit & Active.

Alternatively, you can make antojitos using my low-carb pastry dough recipe to make Mushroom Pinwheels. The technique used to cut the pastry may differ from using tortillas, but I’m sure the outcome will be just as tasty.

Cream Cheese:

Soften the cheese to room temperature or place it in a microwaveable bowl to heat in 10 second increments until softened.

Cottage Cheese:

Incorporating cottage cheese in antojitos can help to reduce the fat content and add a pleasant, mild flavor that balances well with the richness of cream cheese.

Cheddar Cheese:

Any strong tasting and good melting cheese like cheddar, pepper jack or tex mex works for this recipe.

Pickled jalapenos:

Drain them, then lay them on a paper towel to soak up any juice. This extra step prevents the cheese spread from becoming watery, resulting in soggy antojitos. Of course you can always use freshly chopped jalapenos, however remove the seeds to control the heat level.

Red and Green Pepper :

Dice the peppers into small cubes, to help the cream cheese mixture spread smoothly onto to the tortilla. A mix of yellow and orange pepper will also work in this recipe too.

Green Onions:

Slice the green onions thin to mix them into the cream cheese spread well.

Red Onion:

Dice the red onion into small cubes and use more or less as desired.

Garlic cloves:

I prefer to use fresh garlic for this recipe since it adds more heat an flavour but garlic flakes also work well.

Spices:

Salt, pepper, and cumin powder enhance the spiciness of these antojitos, but feel free to experiment with a few spices you have on hand, too.

Taste test the filling before you spread it onto the tortilla and adjust spices to your desired preference. I find that the cheese and pickled jalapenos provide enough of a salty taste, so I add less salt than necessary.

How to make Low Carb Antojitos

1) Preheat Oven

Start by preheating your oven or air fryer to 375F. Line a baking tray with parchment paper. Place another sheet of parchment paper on a cutting board for easy cleanup when spreading the cheese mixture to avoid a messy counter.

2) Mix the ingredients

Combine the cheese, cream cheese, cottage cheese, vegetables and spices in a medium-sized bowl until fully blended. For a quicker method, blend the ingredients in an electric stand mixer until incorporated into a smooth filling.

3) Spread the cream and cottage cheese mixture

Lay a tortilla over the parchment paper on the chopping board and spread 2 heaping tablespoons of the cheese mixture evenly covering the entire tortilla.

4) Roll the tortillas

Roll the tortilla from one edge to the other to form a tight roll. Then, place it seam-side down to allow it to stick and stay wrapped.

Continue spreading the cream cheese mixture and rolling the tortillas until all the mixture is used. I can fill about six wraps, but the amount depends on the size of the tortillas you use.

5) Cut the tortillas

Cut the rolled tortillas diagonally into half-inch strips, then place each piece flat side down on the baking tray.

6) Bake the cut tortillas

Lay the antojitos on a baking sheet, leaving some space between each one, and bake for 13-15 minutes or until golden brown.

7) Alternatively, air fry the cut tortillas

Alternatively, if you have an air fryer, put the unbaked antojitos in it, placing a trivet on top to prevent them from flying around while they cook. Air fry for about 6 minutes, but check on them halfway to avoid burning them.

8) Transfer to a cooling rack

Once done, take the antojitos out and let them rest on a cooling rack for a few minutes to allow them to crispen as they cool.

9) Serve low carb antojitos

These low carb antojitos are even more enjoyable when dipped in sour cream, salsa or your favourite sauce. Alternatively, you could pair them with a soft-boiled egg for breakfast, which would add an extra dimension of flavour.

Filling Suggestions and Ideas

  • Mix the cream cheese filling with herbs like cilantro, mint, oregano, chives or parsley to add a fresh tasting element to these antojitos.
  • Spread your favourite apple chutney, sweet pickle or red pepper jelly with the cream cheese spread to add a sweeter touch and flavour.
  • Adding tangy condiments like finely chopped olives, pimentos, dill pickles, or capers will give these antojitos a delicious, sharp taste.
  • Add an extra protein to the filling such as ham, bacon bits or leftover roast chicken or turkey. Alternatively, tofu or paneer are suitable vegan options.
  • Switch up the flavours by adding onion dip seasoning, ranch seasoning or taco seasoning for a creative twist.
  • You can make it Greek-style by adding spinach and feta to the cream cheese or using a homemade artichoke dip spread instead of cream cheese.
  • Substitute the cream cheese with ricotta or mascarpone cheese for a slightly creamier texture.

Tips for making Low Carb Antojitos

  • Soften the cheese by keeping it at room temperature or use your microwave to soften it quicker, since it will make it easier to work with the cheese while assembling the Antojitos.
  • Bring the tortillas to room temperature if they’ve been stored in the fridge or heat a few at a time wrapped in paper towel in the microwave. About 10-20 secs.
  • Use a spatula, knife, or pastry cutter for even distribution of the cream cheese filling, to ensure the entire tortilla gets covered.
  • Cut the rolled tortillas diagonally to make it more convenient to dip in salsa or soft-boiled eggs.
  • After baking, transfer the antojitos to a cooling rack to crispen.
  • If you do not have access to keto tortillas, you can try using the keto pastry that is used to make mushroom pinwheels as an alternative.

How to Serve Antojitos

  • Serve these delicious antojitos along with salsa, sour cream- and nacho style with guacamole.
  • Furthermore, enjoy these cheesy finger foods dipped in soft boiled eggs for a yummy breakfast treat.
  • Serve them as an accompaniment to Shakshuka for an alternative to bread.
  • Arrange them on a large platter with your favourite dip in the centre. The spiral pattern of these antojitos will make a pretty dish for potlucks.
  • Make your work or school day more exciting by packing some antojitos in your lunch box!

Storing, Reheating & Freezing Notes

Storing

  • Store leftover antojitos in and air tight container in the fridge for 2-3 days.

Reheating

  • Reheat cooked leftovers in the oven or air fryer to warm them up and get that crispy texture back.

Freezing

  • To keep your cooked or unbaked antojitos fresh for longer, freeze them for up to one month. You can easily do this by placing them in a freezer-proof container and storing them in the freezer.
  • If you’re storing un-baked pieces, make sure to layer them in between sheets of wax paper to prevent them from sticking together.
  • There’s no need to defrost them; increase the baking time and bake them until golden brown and crispy.
