Cowboy Caviar, also known as Texas Caviar, is a Tex-Mex salad made with fresh vegetables, beans, and a tangy vinaigrette. It got its playful name as a budget-friendly alternative to traditional caviar.

My low-carb version keeps those fresh Tex-Mex flavours while swapping in hearts of palm and using a small amount of fava beans for a lighter twist.

Why I Use Hearts of Palm in Cowboy Caviar

This was my first time using hearts of palm, so I wasn’t quite sure what to expect! Hearts of palm are the tender inner core of certain palm trees, and they are typically sold canned or jarred in water. They have a mild flavour and a tender yet slightly crisp texture that soaks up the zesty lime dressing beautifully. I loved how they added substance to this cowboy caviar while keeping it lighter in carbs than the traditional version.

I also included a small amount of fava beans. Traditional cowboy caviar often contains several types of beans plus corn, but using just half a cup of fava beans keeps the classic feel while making this version more suitable for anyone trying to reduce their carbohydrate intake.

  2. In a small bowl, whisk together the olive oil, lime juice, apple cider vinegar, garlic, cumin, paprika, salt, and pepper.
  3. Then, pour the dressing over the vegetables and gently toss until everything is coated.
  4. Next, fold in the diced avocado just before serving.
  5. Finally, refrigerate for 20–30 minutes to allow the flavours to develop.

Pair It with 2-Ingredient Parmesan Jalapeño Crisps

Traditional cowboy caviar is often served with tortilla chips, but I wanted to keep this meal lower in carbs. So, these 2-Ingredient Parmesan Jalapeño Crisps are the perfect crunchy alternative. They’re crispy, cheesy, slightly spicy, and ideal for scooping up every bite of cowboy caviar.

Ingredients

  • 1½ cups grated Parmesan cheese
  • 1 jalapeño, thinly sliced

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Spoon small mounds of Parmesan onto the baking sheet and gently flatten each one.
  • Top each mound with a thin slice of jalapeño.
  • Bake for 5–7 minutes, or until golden and bubbling.
  • Let cool for 5 minutes until crisp before serving.

  • ½ cup Fava beans
