Best Keto Rose Syrup

This sugar-free and low-carb homemade Keto Rose Syrup doesn’t require any fresh roses, which can be pretty expensive nowadays unless you have beautiful rose bushes in your garden.

Rose water & low-carb sugar

Unfortunately, my garden has no suitable spot to grow roses due to its awkward sun position. While organic rose petals are typically used to make rose syrup, I find this rose-flavoured keto version effortless to make using rose water and, of course, low-carb sugar.

Beetroot for natural colour

Also, without the vibrant use of fresh roses, you’ll be amazed to learn that you can achieve a lovely rosy hue by using a natural ingredient: beetroot.

If you’re skeptical that a low-carb rose syrup wouldn’t be as good as traditional syrup, then you’ll be pleasantly surprised at how simple it is to prepare a keto version at home, similiarly to my low-carb ginger syrup recipe.

Keto rose syrup has many uses, such as flavouring cakes, sodas, cocktails, or drizzling over yogurt and ice cream. Additionally this keto syrup is easy and quick to prepare and can be stored convenienlty in a jar. Amazingly a jar of keto rose syrup can stay fresh for up to two weeks, allowing for longer use.

Carbs and Servings in Keto Rose Syrup

This recipe yields 2 cups of delicious sugar-free rose syrup and has zero net carbs per serving.

  • 6g of carbohydrates
  • 6g of fibre
  • 0g of net carbs

While you can use this rose syrup in low-carb desserts, remember that if you are counting carbs only, each serving will contain 6g of carbs.

What You’ll Need to Make Keto Rose Syrup

Rose Water

Rose Water comes in a ready-made bottle, so you do not have to make it from scratch. Fortunately, you will find it at most South Asian grocery stores or online. To make your own rose water, you will need organic-grade rose petals.

Low Carb Sugar

In the recipe, I use monk fruit, but I also sometimes use erythritol and Swerve. Allulose will work just fine and will not crystallize. If you’re not doing low carb or keto, you can use regular white sugar instead and skip the xanthan gum. Just heat it on medium heat until it reduces and thickens.

Water

Just regular tap water but filtered, bottled water is okay, too.

Beetroot

The secret ingredient is to give your rose syrup a beautiful, rosy colour. Grate the beetroot and keep it aside. Wear gloves or an apron to prevent your clothes and hands from staining. Beetroot can be pretty messy.

Salt

A pinch of salt will enhance the sweetness of the syrup.

Xanthan Gum

When making this recipe with low-carb sugar, you’ll need xanthan gum to thicken the syrup to your desired consistency. To avoid lumps, sprinkle the xanthan gum in small amounts while mixing to allow it to dissipate. You can find xanthan gum in the baking or gluten-free aisle at your local grocery store. Bob’s Red Mill is a recommended brand.

How to Make Keto Rose Syrup

1). In a small saucepan, bring the rose water, sweetener, and salt to a boil until the sweetener is dissolved. Then, reduce the heat to medium, add the grated beetroot, and let it simmer for about 3-4 minutes. You’ll notice the rose water change to a deep, rosy colour almost immediately.

2). Next, strain the rose syrup into a glass jug or heat-proof container and discard the grated beetroot. While the rose mixture is hot, gradually sprinkle in xanthan gum and whisk until the mixture thickens into a syrup.

3). Set aside your keto rose syrup to cool and thicken a bit more. After it has cooled completely, transfer it into a jar or container with a lid for storage.

Quick Tips

• If you’d like your syrup to be much thicker, simply pour it back into the saucepan after straining it. Then, whisk in the xanthan gum gradually and heat it over medium heat. Let it boil until it reduces to your desired consistency.

• To prevent beetroot stains, grate the beetroot in the sink or wear gloves and aprons to avoid staining your hands and clothes.

• To skip the extra step of straining, let the grated beetroot soak in 1/2 cup of water. Then, strain it and add the infused water to the saucepan along with the sweetener and salt from the beginning.

• Add xanthan gum gradually in small quantities and mix vigorously until it thickens.

• Pour the rose syrup into a Mason jar or bottle, let it cool completely, and then store it in the fridge. Remember to give it a good stir before each use.

Ways to Use Keto Rose Syrup in Recipes

  • You can create a rose-flavoured shrikhand by mixing 1/4 cup or more of keto rose syrup into the strained Greek yogurt.
  • Create a sugar-free Falooda by blending this low-carb rose syrup with soaked basil seeds and almond milk.
  • Drizzle the keto rose syrup onto your preferred yogurt, ice cream, or pancakes to infuse your treat with a delightful rosy flavour.
  • For a unique twist on a vodka cocktail or any gin mix, swap out the regular simple syrup for keto rose syrup, which adds a floral flavour.
  • Create a floral tea by mixing a tablespoon or two of rose syrup into steeped tea.

Storage Notes

You can store the syrup in a mason jar, glass bottle, or a covered container in the fridge for up to two weeks. Over time, the syrup may crystallize, but giving it an occasional stir will restore it to its original consistency. Remember to stir it before use.
