Crunchy Keto Red Cabbage Coleslaw is low-carb and sugar-free, elevating any burger, sandwich filling or side option to a main meal. Colourful and full of crisp flavour, this homemade slaw is easy to make and requires little effort.

Crunchy Keto Red Cabbage Coleslaw
Crunchy, peppery and sweet red cabbage is the main star of this recipe. With a combination of grated carrots and a sugar-free apple cider vinegar dressing, the red cabbage is refreshing, cool and best served with spicy burgers such as my Asian Turkey Burgers. It’s also great as a BBQ condiment during the summer when a cooling effect is very much needed.

Is Coleslaw Low in Carbs?
While cabbage, red or white, is relatively low-carb, store-bought coleslaw that contains cabbage and most homemade versions include mayonnaise dressing with white sugar. This Crunchy Red Cabbage Coleslaw still uses mayonnaise which is low in carbs, but I replace the sugar with sweetener. I also add apple cider vinegar to this recipe for some healthy enzymes.
Ingredients for Keto Red Cabbage Coleslaw
Red Cabbage – remove a couple of the outer layers and slice it thinly.
Carrots – Peel the carrot and either julienne or grate it.
Red Onion – thinly sliced
Mayonnaise – don’t like mayo? Switch it with sour cream
Apple Cider vinegar – gives Braggs ACV
Monk Fruit Sweetener or Erythritol – adds sweetness to the recipe to balance the tartness.
Salt & Pepper – adjust to your preference.
Let’s make Keto Coleslaw
Mix red cabbage, carrots and onions in a mixing bowl and keep it chilled in the fridge until you’re ready to serve.
Whisk the coleslaw ingredients in a smaller jar or bowl and keep it in the fridge until serving.
Before serving, pour the coleslaw dressing over the red cabbage mixture and mix it all up.
Serve immediately.
Tips for making the best Keto Red Cabbage Coleslaw
Remove the outer layers of the cabbage and slice the crunchy layers underneath.
Chill the coleslaw dressing in the fridge before serving.
Make the dressing separately before pouring it over the cabbage and carrot mix to keep the cabbage crunchy.
To make ahead, prepare and slice the vegetables and keep them in the fridge separate from the dressing. Then when ready, mix everything.

Storage Tips
This coleslaw is best eaten on the day you make it or within 2 days, after which it becomes watery.
However, to revive it the next day, remove the excess water and add a bit of mayonnaise to bring it back to its creamy state.
