Peanut Butter Crumb Topping

Have you ever plunged a spoon into your peanut butter jar, only to feel like you’re trying to crack open a safe? That thick consistency might as well be cement, so solidified that you could use it as a doorstop!

If you’ve experienced this peanut butter struggle, fear not! Here’s a crumb topping recipe that may save your taste buds from a sticky situation.

This Peanut Butter Crumb Topping is a great alternative to adding peanut butter to your whipped dessert or low-carb yogurt, especially when you crave the taste without the thick, gooey texture. It tastes fantastic sprinkled over my favourite combination of raspberry jam and Greek yogurt, and you can even try it sprinkled over a layered dessert like Amaretto Cheesecake Mousse.

Ingredients Notes for Peanut Butter Crumb Topping

Almond flour:

Almond flour has a neutral taste that helps to create the crumbs and enhances the peanut butter flavour in this recipe. I use the Kirkland almond flour from Costco, but you can always buy it at your local grocery store.

Natural Peanut Butter:

I use Kirkland’s natural peanut butter, which contains only peanuts and no added sugars. Allow it to come to room temperature or warm it slightly in the microwave.

Sweetener:

Any low-carb sweetener can be used for this recipe. However, if you only have white sugar on hand, that will also work, although it will increase the carb amount to each serving. I typically use a sweetener that blends monk fruit and erythritol, like Volupta and Lakanto.

Roasted Peanuts:

I find that store-bought pre-roasted almonds are a convenient way to add to the crumb topping after it has been baked, ensuring that the peanuts do not get burnt. But, if you only have raw peanuts, roast them separately in the oven before making the peanut butter crumb topping. Once cooled, chop them roughly and add them to the mixture before storing it.

Salt & Vanilla Extract:

A bit of salt enhances the peanut butter taste, adding a sweet and salty flavour to the topping. Vanilla extract is optional but can intensify that nutty flavour in the recipe.

How to Make Peanut Butter Crumb Topping

Prepare the roasted peanuts

1) If you use pre-roasted peanuts, you can skip steps 1 & 2. If you need to toast raw blanched peanuts, place them in a flat pan over medium heat on the stove. Stir the peanuts in the pan until slightly browned and toasted, which should take about 10 minutes.

2) Alternatively, to roast a larger batch (approximately 1 cup) in the oven, arrange the peanuts in a single layer on a baking tray lined with parchment paper. Roast them in a preheated oven at 350°F for about 15 minutes.

3) Add your roasted peanuts to a food processor and pulse them a few times to chop them into small pieces. Transfer the chopped nuts to a plate or bowl and set aside.

Preheat oven and mix the ingredients for the topping (except for roasted peanuts)

4) Preheat oven to 350°F and line a baking tray with parchment paper. Add all the ingredients, except the roasted peanuts, to a food processor and pulse the mixture a few times, stirring the mixture between pulses.

5) Continue pulsing until the mixture resembles grainy, crumbly sand, which you can sieve quickly through your fingers.

6) Transfer the mixture to a parchment-lined baking tray and bake in a preheated oven for 7 to 10 minutes at 350°F. Stir occasionally to prevent the mixture from burning.

7) Switch off the stove, remove the tray, and allow the crumb topping to cool in the tray.

Add the chopped roasted peanuts

8) Once the peanut butter crumb topping has cooled, add the chopped roasted peanuts to the mixture.

9) Stir well to combine everything. Then, hold the edges of the parchment paper to lift the mixture and transfer it into a storage jar, using the paper as a funnel.
