Have you ever tried Falooda? It’s a delightful, refreshing rose-flavoured milkshake that is protein-rich and far from your average drink. With gel basil seeds and sugar-free rose syrup at the bottom, it has a fancy, pink, and rosy appeal. It’s not your casual drink; it may just make tapioca pearls take a backseat.

What is Falooda or Faluda?
Falooda, which means “shreds,” originates from Persia, now known as Iran. It is a fun rose-flavoured milk drink of rose syrup, vermicelli, sweet basil seeds, and ice cream or kulfi (Indian ice cream). This beverage is famous for its vibrant fuchsia colour and diverse textures, represented by the “shreds” referring to the vermicelli.
Is Falooda Low Carb?
No, a classic falooda is not low in carbs because it contains full-fat milk, ice cream, sweet rose syrup loaded with refined sugar, and vermicelli noodles that are usually high in carbs. That’s why I was determined to enjoy falooda this summer without breaking my low-carb lifestyle by creating a keto-friendly version.

This rose milkshake falooda recipe makes two servings and presents a tasty, low-carb, sugar-free variation of the classic version. It uses homemade keto rose syrup and unsweetened almond milk as the primary ingredients to create a delicious drink. Additionally, basil seeds are included, offering a substantial fibre boost in a single serving.

Ingredient Notes
Unsweetened Almond Milk:
In this sugar-free falooda recipe, I use low-carb unsweetened almond milk since it has a slightly thicker consistency than cashew milk. However, you can substitute it with nut milk or even oat milk. On the other hand, if you are not watching carbs, then your regular dairy milk will work, too.
Keto Rose Syrup
For this recipe, you will need my homemade keto rose syrup, which is easy to make and does not require rose petals. Alternatively, you can use a store-bought rose syrup, but remember that any rose syrup brand, such as Rooh Afza, will contain sugar and be high in carbs.
Basil Seeds:
To find basil seeds, visit South Asian food stores, health or specialty stores, or shop online. These seeds are the preferred ingredient for this recipe since they have a slight sweetness. But if you cannot find basil seeds, you can replace them with chia seeds. Remember that chia seeds may have a slightly different gelatinous texture in the falooda.
Water:
When the basil seeds are soaked in regular tap or filtered water, they become gelatinous quickly.
Low Carb Vanilla Ice Cream (optional):
Although optional, no falooda is complete without a scoop or two of ice cream. You can use your favourite low-carb vanilla ice cream or make your own with cottage cheese or whipped cream. I’ve even included a cottage cheese vanilla ice cream recipe for this recipe. Let me know how it turns out if you decide to try it. I plan on creating a separate post for it in the future. Alternatively, you can follow my raspberry ice cream recipe and replace the raspberries with some keto rose syrup.
Garnish:
In this recipe, I garnish the rose milkshake with crushed dried rose petals, available at my local South Asian store, and chopped pistachios. However, chopped peanuts, cashews, or walnuts would make a great topping for this falooda.
How to Make Rose Milkshake Falooda
Prepare Basil Seeds
To prepare basil seeds, place them in a bowl or jar and cover them with water. Let them soak for about 5 minutes until they become gelatinous. After soaking, stir the seeds to separate them, then strain them into a bowl and set them aside.
Make rose milk and layer falooda
Mix the unsweetened almond milk with the keto rose syrup in a jug and stir until it becomes pink. Set aside. Then, drizzle the bottom of a tall glass with a tablespoon of the syrup, place a few tablespoons of the gelled basil seeds, and fill the glass with the rose almond milk about 3/4 of the way up.
Add low-carb ice cream to falooda and garnish
Next, add a couple of low-carb vanilla ice cream scoops and garnish with crushed dried rose petals and chopped nuts of your choice. You can also drizzle more keto rose syrup and serve your sugar-fre rose milkshake falooda with a straw.
Useful Tips and Variations for Rose Milkshake Falooda
Make ahead: You can prepare all the elements of the rose milkshake falooda in advance. Soak the basil seeds, strain them, and store them in an airtight container for up to 2 days. The Keto rose syrup can be made a week ahead, as it stays fresh for a week or two. Additionally, you can make the rose almond milk the day before and store it in the fridge.
Royal Falooda: Royal falooda includes vermicelli noodles and jelly cubes. For a more indulgent option, consider using low-carb shirataki noodles. Furthermore, add cubed keto jello to make a low-carb version of the classic royal falooda.
Frozen yogurt: In the milkshake, swap out the low-carb ice cream for your preferred frozen low-carb yogurt and create a protein-packed treat.
Party treat: Moreover, serve the rose milkshake falooda in smaller glasses to create individual-sized portions ideal for Diwali parties and special birthdays and gatherings.

INGREDIENTS
Sugar-free Rose Milkshake Syrup
- 3 cups Unsweetened Almond Milk
- ⅔ cups Keto Rose Syrup (on this site) - or non-low carb brand such as Rooh Afza
- 1½ tbsp Basil Seeds
- 2 cups Water
- 1 cup Low Carb Vanilla Ice Cream (optional) - or Cottage Ice Cream (see recipe below)
- ¼ cup Crushed Rose Dried rose Petals - for garnish
- ¼ cup Chopped nuts - for garnish
Low Carb Cottage Cheese Ice Cream (add 4 hours to recipe time)
- 1 cup Cottage cheese - 4% full fat
- 2 oz Whipping Cream - Whipped
- 1 ½ tsp Liquid stevia
- 4 tbsp Powdered Monk Fruit - about three tablespoons granular
- 1 tbsp Vanilla Extract
INSTRUCTIONS
- To prepare basil seeds, place them in a bowl or jar and cover them with water. Let them soak for about 5 minutes until they become gelatinous. After soaking, stir the seeds to separate them, then strain them into a bowl and set them aside.
- Mix the unsweetened almond milk with the keto rose syrup in a jug and stir until it becomes pink. Set aside. Then, drizzle the bottom of a tall glass with a tablespoon of the syrup, place a few tablespoons of the gelled basil seeds, and fill the glass with the rose almond milk about 3/4 of the way up.
- Next, add a couple of low-carb vanilla ice cream scoops and garnish with crushed dried rose petals and chopped nuts of your choice. You can also drizzle more keto rose syrup and then serve your sugar-fre rose milkshake falooda with a straw.
Low Carb Cottage Cheese Ice Cream (optional)
- Blend everything, except for the whipping cream, until smooth and creamy using an electric blender.
- Transfer the cottage cheese mixture into a mixing bowl and keep it in the fridge while you make the whipped cream.
- Whip the cream until it doubles in volume. Then, take out the cottage cheese mixture and fold in the whipped cream until blended.
- Transfer the mixture to an ice cream pan or a freezable dish, cover it with foil, and freeze for up to 4 hours. It should scoop easily ready to add to the rose milkshake falooda.
